If you are like me, I love an effortless delicious dinner for my family! This Lemon Herb Crockpot Chicken is perfect for this. While we are held up in our homes for the next few weeks while the world tries to get a handle on the COVID-19 pandemic, I thought I would share an effortless meal you can make with a few ingredients, you may already have on hand.
I used boneless, skinless tenderloins because I had them on hand, but you can certainly use chicken breasts or thighs.
Ingredients:
- 7-10 tenderlions {4-6 breasts or 6-8 thighs}
- Salt and pepper to taste
- 1 tsp Italian Seasoning
- 3 tbsp minced garlic
- 1/2 stick of butter, quartered
- Zest of half a lemon
- Juice of half a lemon
- 1 14oz can Chicken Broth/Stock
Directions:
- In a 6oz crockpot, place chicken in the bottom and add salt/pepper
- Pour broth or stock over chicken
- In a separate bowl, combine Italian seasoning and minced garlic. Sprinkle over chicken.
- Place lemon zest on chicken and gently squeeze the half lemon, making sure the juice flows over the chicken.
- Cut butter stick into 4 equal quarters and place on top of chicken
- Cover and cook on low for 6 hours
- Serve over steamed rice and garnish with sliced lemons
**because I used tenderloins, the meat fell apart making shredding easy, but if you use breasts or thighs the meat will hold it's shape.**
