During the Summer we always to try to eat healthier than other times of the year.  I am not really sure why, maybe because several types of fresh fruit are readily available this time of year. 

I made this fresh fruit tart a while back for my daughter's Luau party and it didn't take long to become one of my family's favorite. This classic tart has three components: sugar cookie crust {oh yes I did}, cream cheese filling and delicious fresh fruit. Ok, so not as healthy as it looks, but it is SO GOOD!

While you can make the crust several days in advance you don't want to make the filling until the day you will be enjoying this dessert. 

What you will need: 

Mini Muffin Pan
Sugar Cookie Dough
Cream Cheese
Fresh Fruit
Dough presser {optional}





Ingredients: 

Shell: 
16.5 oz. Sugar Cookie Dough

Filling: 
2/3 Cup Cream Cheese, softened
1/4 Cup Sugar
1/2 Teaspoon Vanilla
Assorted fresh fruit

Preparation: 

Prepare crust - roll a small amount of cookie dough with your palms to make a ball, press into the mini muffin cups to create the crust. Make sure the crust only comes up to the top of the pan and not overflowing it. Bake according to package. Cool for approximately 30 minutes before removing from pan and adding filling and fresh fruit. 

While the crust is baking, prepare the filling. Beat cream cheese, sugar and vanilla at medium speed with an electric mixer, until smooth. Spoon filling into crusts. Cover and chill for about 1 hour before serving. Add the fresh fruit topping. Serve and enjoy!
